Oils and vinegars are like fine wines: with subtle nuances of flavors, thousands of varieties and, not to mention, the pure deliciousness that comes from cooking with them. It is our mission at the Olio tasting room to provide our patrons an opportunity to experience and learn about the highest quality and freshest olive oils and aged balsamic vinegars from around the world.
The tasting room is modeled after similar rooms across the Mediterranean where olive farms abound, and is filled with dozens of Italian-made stainless steel barrel-like containers called “fusti”. Each of them houses a different variety or flavor of olive oil or balsamic vinegar from around the world for which patrons can taste in the store. After tasting, we will bottle, cork and seal your favorites on the spot.
About the Shop Owner
For many years owner Penny Willimann and her husband purchased standard brand name olive oils off the shelf at the local grocery stores in Northern Virginia, where they reside. It was not until a few years ago when they stumbled across a similar tasting room that showcased gourmet oils and vinegars from around the world that their eyes were opened to the true experience of extra virgin olive oils and balsamic vinegars. After that first visit to the tasting room, they kept going back, year after year, learning more and more. It was then that they fell in love with olive oil and vinegar, and then that they decided the same experience must be brought to Virginia.
